Full Experience Description
La Rioja region in Spain is very well known for its red wine, extensive vineyards and old cellars but not many people know that this fertile land also offers the main mushroom cultivation in Spain. Specially, the town of Pradejon where the cultivation of mushrooms started in the early fifties and has the biggest fungi centre in Spain which is now open to visitors.
For you to make the most out of this experience, you can be picked up from your hotel in Bilbao, San Sebastian, Vitoria, Pamplona, Burgos or Zaragoza. Let us know where are you staying or if you rather not to include transportation on this experience and we will send you a budget.
You will arrive to Pradejon, La Rioja, to enjoy a guided tour through this mushroom centre, unique in Spain. Your visit will be divided into 3 parts:
Interpretation centre
In around 1 hour and 30 minutes you will be explained by an English speaking guide, everything you need to know about growing mushrooms and learn how to identify edible mushrooms. After watching an introductory projected video about how different types of fungi are grown in L Rioja, you will learn how to select spawn and inoculating seed. You will also learn how to prepare compost in a simple and fun way. The first part of your visit will be completed with a garlic mushroom tasting paired with a D.O. Rioja red wine or water for kids or for those who don’t want to drink alcohol.
Mushroom crops
Become a mushroom professional getting involved in the cultivation and selection of Rioja mushrooms. You will visit a family run Champignionnière which keeps part of its traditional production but also has modern Dutch equipment that places it among the best companies within the national industry. During this section of your visit, you will also get to try row mushrooms guided by an expert!
Growing fungi and fungi identification
Learn how to grow fungi in a family run cellar, dedicated to the traditional way of growing the two species of fungi most used in Spain: shittake and oyster mushrooms. In addition to the traditional growing, the company uses modern Korean growing systems for the production of exotic fungi, being the first one in Spain to market the Pleurotus eryngii.
After your visit in the fungi centre, you will go to the restaurant ‘La Espora’ in the same town to enjoy a 4 courses degustation menu. The degustation menu includes, not only all the types of fungi you have been exploring during your visit, but also some traditional dishes from La Rioja:
Aperitif

Riber bank buds with vinaigrette from La Rioja
Eryngii fungi puff pastry with shrimp in sauce
